Certified Authentic

Every consignment ships with a nose-to-table certificate of authenticity and a verifiable ten-digit individual identification number, so you always know the animal, the farm and the prefecture.

Master-Graded

We accept only the upper tiers of the Japanese grading scale — A4 and A5, with a Beef Marbling Standard of 8 and above. If it doesn't melt, it doesn't ship.

The Language of Marbling

Understanding the grade in every bite.

Japanese Wagyu is judged on yield and on quality — marbling, colour, firmness and fat character. The Beef Marbling Standard (BMS) runs from 1 to 12. We deal almost exclusively at the top of the scale, where intramuscular fat renders silken at body temperature.
