We accept only the upper tiers of the Japanese grading scale — A4 and A5, with a Beef Marbling Standard of 8 and above. If it doesn't melt, it doesn't ship.

Japanese Wagyu is judged on yield and on quality — marbling, colour, firmness and fat character. The Beef Marbling Standard (BMS) runs from 1 to 12. We deal almost exclusively at the top of the scale, where intramuscular fat renders silken at body temperature.
